The wonderful benefits of mushrooms

We too often take these small, pale fungi for granted, however cultures around the world have eaten or used mushrooms medicinally for centuries, dating all the way back to ancient Egypt and the Ming period in China.  Mushrooms are a superfood, and one of the most health-promoting foods on the planet.

Countless scientific studies have revealed a variety of ways mushrooms can be useful in preventing and treating serious health conditions — and in improving overall health. (1)

In fact, research has identified more than 200 conditions that may benefit from mushroom consumption and more than 100 different beneficial effects they can produce for the body. (2)

Every mushroom is different

Highly nutritious, each variety of mushroom possesses a slightly different nutritional profile.  They generally contain all the essential amino acids (often earning them the title of ‘vegetarian steak’), vitamins E and provitamin D (ergosterol, when dried), vitamin B (B1, B2, B3, B12 and pantothenic acid) and minerals (notably iron, manganese, potassium, calcium, magnesium, copper, phosphorus and zinc).(3) Add to that a good dose of fibre, and you indeed have a noble ingredient to add to your culinary portfolio.

The button mushroom (also called Paris mushroom) is the most commonly consumed world-wide. However, the shiitake, with its delicious, aromatic flavour, follows closely behind in terms of popularity.

Fortunately, the past few years have seen a burgeoning demand for locally grown mushrooms here in Quebec – and regional small farmers have responded to the need. (4)

Here in our kitchen at Spa Eastman we take every opportunity to include fresh, locally sourced mushrooms, especially as they are the perfect match for Art de Vivre C’Tonique (anti-inflammatory, low glycemic index and easily digestible). Participate in this workshop from March 13th to 20th.
