Traditional chicken broth

1 organic chicken carcass or 8-10 organic chicken wings
5 liters of water
1 tbsp organic apple cider vinegar
Vegetables (leeks, carrots, turnips, celery, onions, etc.)
Spices (thyme, rosemary, cloves, etc.)
1 head of garlic

Put all the ingredients into a pot. Bring to a boil and simmer on very low heat for around 8 to 12 hours. Discard the ingredients, filter the broth and let it cool before refrigerating it. The broth can be kept for up to 5 days.  It is also possible to freeze it. A really good broth will have a thick, jelly-like texture when cold.

Reheat and add salt to taste just before eating it.
